1. Quick, easy, healthy meal…
We try to make meals that are lower in carbs, plant heavy, good protein, low sugar, and overall nutrient-dense. Lettuce wraps are just about perfect. We start with a piece of romaine lettuce, add a protein (sliced chicken thighs or breasts, higher quality lunch meats, steak, or pork), sliced pickle, cucumber, tomato, and avocado. We add some mustard, an oil and vinegar-type dressing, or other type of condiment. Thin strips of cheese are usually on there. The options are endless… sauerkraut, salsa, pico, guac, hardboiled eggs, etc. Here is a pic of one that we made one day this week… We didn’t have the larger romaine pieces, but we pulled out some larger pieces of some mixed greens we had in the frig. And note the thin strips of cheese, which totaled less than a quarter of a slice, but still gave that taste of cheese with each bite.
2. Something that shocked me this week (and should shock you!)…
I saw this flyer for a COVID -19 vaccine clinic in Philadelphia, PA. Note the box that says “You can bring a parent or guardian if you want, but it isn’t required!” What??? No matter what your stance is on this vaccine, it should alarm you that there are states offering medical interventions to children as young as 12 without consent from the parents. Where will this type of control and authority end? I’m not sure, but it won’t end with just vaccines. Imagine finding out that your 12-year-old son or daughter received a medication, medical procedure, or even medical advice without you knowing about it or consenting to it. Unbelievable!
3. Movie you’ll be surprised I just watched…
I FINALLY watched the movie Avatar (2009). I know… I know… that’s crazy, right? Well, I’m not sure why I waited so long, but I’m glad I finally watched it. The visual effects are incredible, and the underlying messages are pertinent. I’ll definitely be re-watching it. My favorite quote from the movie… “She’s always going on about the flow of energy, the spirit of animals. She talks about a network of energy that flows through all living things. All energy is only borrowed, and one day you have to give it back.” – Jake Sulley describing the Na’vi female tribe member, Neytiri.
