1. Healthy snack we experimented with this week…
I am constantly trying to take the unhealthy foods that I love and find or create a healthier version of them (I even tried to make a healthy version of sausage gravy. Didn’t go too well!). This week, Lana and I made sweet potato chips. We sliced some sweet potatoes very thinly, lightly coated them with some olive oil, laid them in a single layer on parchment paper on a baking sheet, then baked them for about 20 minutes. Our first batch we did not slice thin enough, but the second batch was perfect. We added some sea salt, put them in a bowl to cool, and within minutes, they were ready to eat. Tasty… and healthy… snack! I’ve had A LOT of fails with food experimentation, but this one was great. SO GOOD!
2. Show I am watching…
There is a show on Hulu called The Bear. We finished Season 1, and are about two-thirds through Season 2. It’s a GREAT show that is described online like this… “A young chef from the fine dining world comes home to Chicago to run his family sandwich shop after a heartbreaking death in his family. A world away from what he’s used to, Carmy must balance the soul-crushing realities of small business ownership, his strong-willed and recalcitrant kitchen staff and his strained familial relationships, all while grappling with the impact of his brother’s suicide. As Carmy fights to transform both the shop and himself, he works alongside a rough-around-the-edges kitchen crew that ultimately reveals itself as his chosen family.” I’ve talked to several chefs, and they all agree that the show is an accurate depiction of restaurant life. There are two episodes, one in each season, that will leave you exhausted and stressed, but last night we watched Episode 7 in Season 2, called “Forks.” It might just be the MOST gratifying/satisfying/best episode of ANY series I have EVER watched. Obviously, you’d have to watch the first season and six episodes of Season 2 to get to it, but I LOVED it. Oh… and the episodes are only about 30 minutes long… another thing I like about the series. CAUTION… if you are doing a cleanse, eating clean, or on a diet, the food they show will torture you!!!! See the trailer below…

I’ve posted this in the past, but it truly is one of my favorites. We get bogged down by the bigness of what we have to do, so we put it off, or simply do not do it. The problem? Not doing it results in things being MUCH harder down the road. I think about this quote from Jim Rohn when my mind is trying to talk me out of doing hard things, or trying to justify why I don’t need to do it. Discipline weighs OUNCES… regret weighs TONS!
