1. Happy Thanksgiving…
I hope you all had a phenomenal Thanksgiving. What a great time to reflect on what we are grateful for… as we all have SO MUCH to be grateful for. For us, it’s been a time of creating new traditions, while remembering past ones. We had a large group of family and friends at our house this year, and it was amazing. A very special day for sure. One thing that I love is having all the kids home at the same time, which seems harder and harder to make happen. Wednesday night (Thanksgiving-eve) was one of those nights… dinner at home with all six kids. I sat back for a moment and just took in the moment… almost overwhelmed with gratitude and in awe of such incredible human beings these, now adults, have become. The stories, the jokes, the sarcasm, and the laughter… I’m pretty sure we could have our own reality show. This Thanksgiving, I am especially grateful for family and friends… those I was with these past couple of days, and those that are no longer with us. We reflect on past memories, cherish the ones we are currently making, and get excited about the ones that we will create in the future. Happy Thanksgiving!
2. Sweet treat I’m enjoying…
Many are surprised to find that I have a sweet tooth, but I do. Complete avoidance is unrealistic, so I take steps to quench my love of sweets without destroying my health. Lana and I came up with a delicious snack/dessert that is our new favorite. It is banana slices, with almond butter, a couple of nuts on top of that (cashews, almonds, walnuts, and/or pecans), and one or two chocolate chips (Lily’s, sweetened with erythritol and stevia). So good! This week we added a little spoonful of coconut whipped cream on top. The key is to make snacks and desserts healthier. See pic below.
